Glazed Lemon "Brownies"


When life gives you lemons, you don't always have to make lemonade.

Why not try a gooey, sweet yet sour, totally yummy brownie-like dessert?

I bet you have all the ingredients on hand!



Ingredients:
3/4 cup flour
3/4 cup of sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
1 stick of butter, slightly melted and cooled
2 eggs
juice of 1 1/2 lemons
zest of those 1 1/2 lemons

To glaze:
1/2 cup powdered sugar
juice of 1 lemon
zest of that 1 lemon

Spray an 8inch oval baking dish with baking spray and set aside. Preheat your oven to 350 degrees.

1. Mix the flour, sugar, butter, salt and vanilla.


2. Add the eggs, lemon juice and zest and fold in until combined.


3. Pour the batter in the pan and bake for 25-30 minutes, a knife in the center should come out clean, and your edges should be golden brown.

 
 
4. Allow brownies to cool completely.

5. To make the glaze, mix the lemon zest, juice and powdered sugar until it becomes syrupy.


6. Drizzle the glaze over the cool brownies, and slide the pan back and forth to ensure entire surface is covered, but not drowned in the syrup.


7. Allow to sit for 15 minutes, and the glaze will set. (not dry)



8. Cut into squares and enjoy!
