Meatless Monday: Potato and Kale Au Gratin

Even though I can not yet eat solid foods, I hardly wanted to deprive my family of a good Monday meal....

So I made something I was totally craving. Crispy potatoes, layers of garlicky kale, cheesy goodness...yum.

Here are the ingredients:
Olive oil
1/2 onion, finely chopped
2 garlic cloves, minced
Salt and Pepper
2 cups of chopped kale (no stems)
1/2 a stick of butter, sliced small
8 potatoes, sliced
3/4 cup milk
1 cup shredded cheddar cheese

1. In a large pan, heat olive oil and add onions and garlic, sauté until translucent.

2. Add the chopped kale, cooking until wilted and bright green.

3. In an 8x14 pan sprayed with cooking spray, layer potato slices on the bottom, then thin slices of butter, then salt and pepper to taste.

4. Add half of the kale, then sprinkle with 1/3 the cheddar cheese.

5. Complete a second layer of potato, butter, salt/pepper, kale, cheese.

6. Layer on remaining potatoes, remaining cheese.

7. Pour milk over the potatoes, then season with salt and pepper.

8. Place in a 350 degree oven, for 1 hour, or until milk is absorbed and the top is golden brown. (I like to remove any excess oils from the cheese and butter by lightly blotting the gratin immediately as it comes out of the oven.)

9. Allow to cool for at least 15 minutes so it can firm up. Serve warm.
