30 Minute Muffins


It's Saturday, its freezing outside, and you are still in your pjs. What better way to start the day than with a hot delicious muffin?

This recipe takes 30 minutes- start to finish, so let's get started!

Ingredients: (yields 6 jumbo muffins)
1 1/2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 egg
1/3 cup oil
1/2 cup almond milk (regular milk works fine too)
1 1/2 teaspoons vanilla
1 1/2 cups of any berry you have on hand- I had blueberries.

Preheat your oven to 400 degrees.

Spray a 6 cup muffin pan with nonstick spray and set aside.

1. Mix all the dry ingredients in a bowl- flour, salt, sugar, baking powder, cinnamon.


2. Make a well in the middle of the bowl and add the milk, egg, vanilla and oil.


3. Mix everything up until blended, then add berries and stir to combined, taking care not to crush the berries.


4. Using a 1/2 cup measure, scoop the batter and put in the muffin tray.


5. Topping: (optional, but yummy): Mix 3 tablespoons of sugar with a dash of cinnamon and sprinkle over each muffin before putting in oven.

6. Bake for 20 minutes or until a knife inserted in a muffin comes out clean.


7. Allow to cool slightly and serve warm.
