Meatless Mondays: Farm Share Crustless Quiche
This is my first year doing a farm share. It is an awesome project set to support your local farmers, eat more veggies and get creative in the kitchen.
This week I received garlic scapes, swiss chard, salad greens, English peas and more.
For dinner tonight, I made a crustless quiche using several components from the farm share, and it took minutes to prepare!
To make your own, you will need:
olive oil
3 garlic scapes, chopped small
1/2 cup english peas
medium bunch chopped swiss chard
5 eggs
1/2 cup skim milk
1/8 cup mozzarella cheese
1/4 cup Parmesan cheese
salt
pepper
Preheat oven to 375 degrees.
In a large saucepan, heat oil and add scapes, peas and swiss chard, cooking down.
In a bowl, mix eggs, milk and cheeses. Salt and pepper to your taste.
Pour veggies into the bottom of a pie pan, then pour egg mixture on top.
Bake for 30 minutes, or until a knife comes out clean.
Allow to cool completely, cut, and serve.
