True Blood Tribute: "Vamp Stamp" Cherry Pie

I admit it. My husband and I may be mildly obsessed with True Blood... and we are counting down til 9 pm today to see the premiere.

To celebrate, a "Merlotte's" worthy pie seemed in order. And this is no Gram's pecan pie- this is blood-red sweet cherry pie. Want a bite?!

To make your own before the premiere, you will need:
My favorite pie crust recipe 
Small alphabet cookie cutters
Plastic straw (for bite marks)
4-5 cups of sweet cherries (pitted)
5 tablespoons cornstarch
1/2 cup sugar
1/4 teaspoon salt
1/4 teaspoon almond extract
4 tablespoons lemon juice
1 tablespoon butter, sliced thin

For top of crust:
1 egg beaten

Preheat oven to 400 degrees.

1. Prepare crusts. Split into two, and save a small bit for letters.

2. In a bowl, combine cherries, cornstarch, sugar, salt, almond extract, and lemon juice.

3. Put bottom crust in pie pan and pour in cherry mixture.

4. Top contents with the thin butter slices.

5. Using a straw, cut holes to resemble vampire bite marks randomly on the pie crust. These will act as your pie vents, and allow some cherry juice (blood) to seep out for maximum effect. Cover pie filling and crimp edges.

6. Cut out "TRUE BLOOD" in your letters.

7. Using a pastry brush, brush on the egg, then stick your letters on the pie.

8. Add another layer of egg, then sprinkle with sugar.

9. Bake for 25 minutes at 400 degrees.

10. Turn oven to 350 degrees and bake additional 25 minutes, or until cherry mixture is bubbling out of the fang marks.

11. Allow to cool completely, and serve with vanilla ice scream...I mean cream. :)
