Mini Peach Tart

Peach season approaches!

This mini tart is simple on ingredients, but really packs a peachy punch.

To make a free form mini tart, you will need:

Half recipe of my favorite pie crust recipe
2-4 peaches (depending on size)
1 tablespoon butter, melted

Preheat oven to 400.

Roll out your pie crust to about 10 inches in diameter.

Chop your peaches in a bowl and sprinkle 2 tablespoons of sugar and a dash of salt.

Place your dough on a parchment lined baking sheet.

Then, place your peaches in the middle.

Fold the dough up and over the peaches toward the middle.

Place in fridge for ten minutes to allow the dough to harden.

Brush the melted butter over the crust and sprinkle sugar.

Bake for 30-35 minutes or until golden. Allow to cool to completely before cutting. Serve with a big scoop of vanilla bean ice cream and enjoy!
